    Puerto Fino – from the town of Puerto de Santa María, soft, slightly creamy & very smooth with attractive baked orchard & citrus fruits with a toasty yeasty character. An excellent match with oysters  $41  $8.50/g

    Fuller & Dry
    Dry Amontillado Los Arcos – an oxidised version of Puerto Fino giving it more of a fuller & much more viscous texture with golden colour, bolder citrusy fruits, walnuts & hints of raisins yet so dry. A beautiful sherry with some Serrano ham or with mussels  $41  $8.50/g

    Palo Cortado Vides – a very interesting style of sherry that swings between two different styles of sherry, the Amontillado style above & the Olorosso style below. The Palo Cortado has delicate coffee & cocoa characters, with freshly roasting pecans & long snappy citrusy finish. Great to accompany a nice bit of cheese or salmon dishes  $87/500ml  $14.50/75ml
